At the heart of TRIO’s kitchen is a chef who sees food to connect people, celebrate culture, and spark joy. Chef Mario Reyes, the culinary mind behind TRIO’s globally inspired menus, brings passion and purpose to every dish he creates. 

A World of Influence

Growing up in Toronto, Canada, Mario was surrounded by a blend of cultures. The early exposure to diverse communities, paired with his travels around the world, shaped his approach to cooking. From the classical techniques of European kitchens to the bold spices of global cuisines, Mario carries a piece of every culture into TRIO’s meals. 

“I learned flavors and classical techniques of different cuisines at a young age,” he shares. “Those experiences continue to guide how I cook today.” 

Cooking with Community in Mind

TRIO serves older adults from many different backgrounds, and Mario views this diversity as an opportunity to bring the world to their tables. No matter the cuisine, he infuses meals with a sense of familiarity.

“The older adults the TRIO serves are a diverse group culturally as well,” Mario says. “This allows us to bring different global flavors to the menus, as well as add regional-inspired menus.” 

For Mario, food is about connection. He believes that eating together fosters community, sparks memories, and builds bridges between cultures. At TRIO, meals don’t just fill plates; they bring people together. “When the older adults receive their TRIO meals, either at home from Meals on Wheels or at congregate sites, it’s always great to see a smile on their faces. For some, this might be the only time they get social interaction, and that makes our work even more meaningful.” 

Creativity Meets Nutrition 

Behind every dish is a balance of creativity and care. Working with TRIO’s team of registered dietitians, Mario crafts meals that are both flavorful and health-conscious.

It’s all about balance. Together, we make sure older adults enjoy food that excites their palate while still supporting their health,” he explains.

By leaning on global spices, marinades, and seasonings, he adds depth without relying on excess sodium or fat.  

Fueled by Passion 

Mario’s motivation is rooted in love—for food, for people, for the shared experiences that meals create.  

“My motivation comes from my passion for cooking, the love of people, and learning from others. I am grateful for all who have influenced my culinary career and want to give back and share my cooking and flavors with others. Happy cooking!”
